Kabob Tabei with roasted tomatoes - Iranian pan kabob

Kabob Tabei is a traditional Iranian kabob dish that can be prepared without using a grill.

Ingredients :

  • 1 and 1/2 pound ground beef, lean 
  • 1 medium red onion, grated 
  • 5 cloves garlic, grated 
  • 2 Tbsp Sweet Paprika spice 
  • 1 Tbsp Turmeric spice 
  • 1 Tbsp Sumac spice 
  • 1 Tbsp garlic powder 
  • 1 Tbsp onion powder 
  • 1/2 tsp cinammon
  • 1/2 tsp ground saffron, diluted in 1/4 cup hot water
  • 10 tomatoes, cut into 1/2 inch slices
  • 3 tbsp tomato paste, diluted in 1/3 cup hot water
  • pinch of salt and pepper
  • 3 Tbsp grape seed oil 

Directions: In a large bowl, combine ground beef, grated red onions, and grated garlic. Using gloves, mix and kneed meat mixture for 5 minutes by hand. Then add turmeric, paprika, sumac, garlic powder, onion powder, cinnamon, salt, black pepper,  and half of saffron water in to meat mixture. Then mix and massage ground meat by hand for an additional 5 minutes. Heat a 10 inch saute pan with grape seed oil on medium low heat for a period of two minutes. Add two tablespoons of ground meat mixture to your hand and create 3 and 1/2 inch long kabobs. One by one, place each kabob in pan. On medium low heat, allow kabob to cook 3 minutes on each side. Once kabob has cooked on both sides, add tomato slices, tomato paste mixture, and saffron water on top of the kabob peices. Place lid on sauté pan. Allow Kabob Tabei to cook for 20 minutes. Enjoy with fresh herbs and basmati rice on the side!
