Roasted Cumin Multi-Colored Carrots with Lebne Yogurt and Mint Oil

Here is my recipe for my delicious roasted cumin multi-colored carrots with lebne yogurt and mint oil:


2 packs of multi-colored carrots peeled, cut into 1 1/2 knobs

2 tablespoons of ghee butter

1/2 tsp of garlic powder

1 tsp of turmeric powder

1 tsp of onion powder

salt and pepper

1/4 tsp of olive oil 

1/3 cup of chopped fresh mint

1/2 cup of Lebene yogurt

1/3 cup toasted sesame seeds


1. Wash and peel carrots then cut into 1 1/2 inch knobs. Toss carrots in a bowl with ghee. Then mix in all spices. Toss well. Place on a baking sheet and bake for 30 minutes at 400 degrees.

2. Meanwhile, mix chopped fresh mint with olive oil, salt and pepper. 

3. Place roasted carrots on a platter with dollops of Lebene, mint oil and finish off with toasted sesame seeds.
