Mediterranean Latka with Saffron Labne Sauce

Serving Size: 8 people 

Ingredients: 

  • 6 gold potatoes, grated, skin on 
  • 3 shallots, grated 
  • 5 cloves garlic grated 
  • 1/3 cup dried dill 
  • 3 tbsp sumac 
  • 1 tbsp garlic powder 
  • 1 tbsp onion powder 
  • 1 tsp paprika 
  • 1 tsp cumin 
  • 1 tsp salt 
  • 1 tsp pepper 
  • 3 eggs 
  • 1/2 cup grape seed oil 
  • 3 tbsp white flour 
  • 1/2 cup lebne 
  • Dilute 1/8 tsp of group saffron with 2 tbsp water- 2 tbsp saffron water 
  • 2 tbsp freshly chopped dill 
  • 2 tbsp pomegranate seeds 

Directions: 

1. Grate potatoes, garlic, and shallots. Place mixture in a thin cloth and squeeze out all liquids. Throw liquids away and pour potato mixture back into bowl. 

2. Add all spices, flour, and eggs to potato mixture. Mix well. 

3. Heat a medium sauce pan with grape seed oil for 2 minutes. Make flat round patties with latka and place into hot oil. Fry on each side for 1 minute. 

4. Meanwhile, in a separate bowl mix lebne with saffron water. 

5. When ready to serve, add a tsp of saffron yogurt on top of Latka and sprinkle with fresh dill and pomagranate seeds
