10 minute Pistachio Pesto Chopped Chicken in Butter Lettuce Cups

Serving Size: 4 people

Cook time: 10 minutes 

Ingredients: 

  • 2 boneless, skin less chicken breasts, wash with cold water and pat dry with a paper towel, cut into 1/2 inch cubes 
  • 1 tsp paprika spice 
  • 1 tsp turmeric spice 
  • 1 tbsp garlic powder 
  • 1 tsp pepper 
  • 1/3 cup chopped roasted peppers and onions (Make your own or Purchase from Bristol Farm)
  • 1 cup Basil 
  • 3 cloves garlic 
  • 3 tbsp pistacchio's
  • Juice of half a lime 
  • 1/3 cup olive oil 
  • salt 

Directions: Heat a saute pan, on medium heat for two minutes. Then add chicken cubes, paprika, garlic, turmeric, and pepper, Sauté for two minutes. Meanwhile, in a food processor add basil, pistachio's, garlic, olive oil, lemon juice, and a pinch of salt. Pulse 10 times, until it reaches a pesto texture. Add roasted chopped onions and peppers to chicken and 3/4 of pistachio pesto to chicken mixture. Sauté for an additional 8 minutes on medium low heat. Serve with remaining pesto and butter lettuce cups! Enjoy your gourmet healthy dinner in only 10 minutes!!
