Cauliflower Margarita Pizza

Serving Size: 4 People 

Preparation Time: 20 minutes 

Preheat: 450 Degrees F

Bake time: 45 minutes 

Ingredients for Cauliflower Crust:

  • 1 Bag Frozen Cauliflower Rice, Defrost, Take it out of freezer 1 and 1/2 hour before using 
  • 2 Tbsp low-fat Ricotta Cheese 
  • 2 eggs 
  • 1/4 cup parmesan cheese 
  • 1 tsp black pepper 
  • 1/2 tsp salt 
  • 3 cloves garlic 
  • 1/4 cup shredded mozzarella cheese 
  • 3 Tbsp Matzah Meal OR Quinoa Flour OR Whole Wheat Flour OR Almond Flour OR Coconut Flour
  • 1 Dishtowel 
  • Food Processor 
  • Williams Sonoma 12 Inch Pizza Pan 
  • Parchment Paper 
  • Olive Oil Spray or Sadaf Truffle Olive Oil Spray

Ingredients for Topping Pizza: 

  •  4 tbsp of your favorite marinara sauce ( My favorite is Raos Marinara Sauce)
  • 1/2 cup shredded mozzarella cheese 
  • 2 tbsp parmesan cheese 
  • 4 Fresh Basil leaves 

Directions for Cauliflower Crust: Wrap up defrosted cauliflower rice in a dishtowel and squeeze all excess moisture out. Make sure you squeeze as much moisture as you can. Then place cauliflower rice in food processor with ricotta cheese, eggs, parmesan cheese, black pepper, salt, garlic cloves, mozzarella cheese, and Matzah Meal or the other options listed above. Pulse 10-15 times until cauliflower mixture looks like the texture of mashed potatoes. Place parchment paper on 12 inch pizza pan and lightly coat with Olive oil spray or Sadaf Truffle Olive oil Spray. Pour cauliflower mixture on pizza pan and use your fingers to evenly spread mixture into shape of pan. Bake at 450 degrees for 30 minutes until golden. Take out of the oven. 

Directions for Topping Pizza: Now that your cauliflower crust is almost cooked through, spread marinara sauce on top using a spoon. Then sprinkle with mozzarella cheese and parmesan. Bake for an additional 15 minutes until cheese is bubbly and cauliflower crust looks crispy and golden! I like mine extra crispy so I bake it for a little bit more! Finish with fresh basil leaves! Enjoy with a nice glass of red wine! Cheers!
